Burrito wrapped in tin foil on campfire!
Preparing tasty food for the camping trip can make it a lot more enjoyable. Here’s a simple recipe that only requires heating over a campfire or small wood burning stove which has an X at the top (http://amzn.to/1OdBFlm) so you don’t have to put the burrito directly on the fire.
* 12 Eggs
* 1 Yellow Onion
* 3 Cloves Garlic, minced
* 4 Med. Potatoes, chopped
* 16 white mushrooms medium size
* 2 Cups Cheddar Cheese, shredded
* 4 Green Onions, chopped
* 3 T. Parsley, chopped
* 8 or 9 Tortilla Shells
* Salt & Pepper to taste
* Tin Foil for wrapping
Chop potatoes and boil until soft. Chop mushrooms and green onions. Crack 12 eggs and cook over low heat until you have soft, scrambled eggs. Salt and pepper to taste. Saute mushrooms, garlic and yellow onions and garlic in 2 T. olive oil until fragrant. In large bowl combine scrambled eggs, potatoes, cheese, green onions, parsley, and Salt & Pepper. Remove any excess liquid, then add a spoon or two of cornstarch to absorb the rest before wrapping into tortilla shells. Roll and wrap in tin foil (many layers of tin foil works better and will prevent burning the burritos) — ready to throw on the fire!
Directions while camping: Throw on stove and wait 5-10 minutes.
